[VoIP] SIP media latency

Hi Guys,
I had a call from Nick Wellington last night. First via Sipgate into my 
Asterisk, which was fine.
Then from Nicks ATA which is SIP (SPA2000) hosted off Ian Jolly's *.
The speech was getting really delayed, I'm talking about 5-8 seconds!
Nick was chatting away, I would say something, and he wouldn't before 
this time delay.
His speech was quite broken, but he said mine sounded fine.
As they are UDP packets, I'm surprised the media didn't just get broken 
up and lost, rather than delayed like this.
Has anyone else has this problem?
